An Immersive Citrus Ritual

Your journey begins before the first bite. As the dessert approaches, guests are greeted with a sculptural lemon perched on a custom-made tree trunk-like holder. At the base, dry ice is doused with aromatic lemon essence — crafted from repurposed citrus trimmings — releasing a mist that rolls gently from the trunk like morning fog over a lemon grove. It’s an olfactory overture that heightens anticipation and sharpens the palate, setting the mood for what’s to come.

A Symphony of Taste, Sight, and Smell

The centrepiece is a masterclass in illusion and refinement. What appears to be a lemon is, in fact, a delicate creation of Earl Grey sponge wrapped in a bright yuzu curd — tart, fragrant, and balanced. Next to it lies a quenelle of Earl Grey sorbet, gently infused with thyme, resting on a pool of premium Spanish olive oil. The subtle bitterness of the tea brings contrast to the citrus, like day meeting night on a single plate. Swirls of torched meringue, matcha-dusted leaves, yellow petals, and gleaming drops of olive oil complete the landscape. Every element is intentional — for texture, for flavour, for art.



A Thoughtful Approach to Sustainability

Behind the beauty of the Tea-Infused Lemon Mirage lies a deeper message. This dessert is a testament to Vantador’s commitment to sustainable dining. Instead of discarding lemon peels, pulp, and trimmings, Chef Emir repurposes these citrus remnants from both the bar and kitchen, steeping them with thyme stems and kaffir lime leaves for two hours to extract their natural essence — resulting in a bold and invigorating citrus aroma. This vibrant lemon essence is then used in the theatrical dry ice pour, enhancing the sensory experience.


By turning what is often wasted into something aromatic and memorable, the chef and his team remind us that dining can — and should — honour ingredients to their fullest potential.
